A kitchen private class was the spark that started the passion of this Uruguayan chef (1980). At the age of 14, he had already planned his first big goal, to be the chef of El Condor, the first five stars hotel in his country.
The first steps in his career were done in a little Chilean grill restaurant, then he worked in a French style buffet. And he achieved his first big success in an Italian style restaurant called Paninis, from being just a small restaurant, he managed to convert it in a franchise with three spaces opened in Uruguay.
The desire of a professional growing drove Perdomo to Italy, where he joined his friend Juan in the Milanese restaurant Al Pont de Ferr, a traditional place in the Naviglio district, owned by Maida Mercury. In this restaurant, Perdomo got attached with the Italian tradition. In 2006, he became the principal chef, and because of his cuisine style, the first Michelin star arrived to the restaurant in 2011.
While making a name in Milan, Italy, he decided to travel around Spain to continue to strengthen up his abilities in awarded restaurants as Berasategui – San Sebastian – and Celler de Can Roca – Girona-.
In 2015, he opens his own restaurant in Milan, along with his partners and friends of adventures Thomas Piras and Simon Press.
